The menu offers a selection of three traditional stews or guisados of your choice (wild mushroom tinga, chicken tinga, steak a la mexicana, mashed potatoes with jalapeños, cochinita pibil, roasted zucchini with tomato). This menu also includes sides of Mexican rice, black beans cooked in clay pot, handmade blue corn tortillas and fresh harvest salad.
Don Francisco is a fifth generation farmer who still grows and harvests different races of heirloom corn in the nearby town of San Miguel Xicalco, Tlalpan. He is a proud member of the arca tierra’s network of farmers.
